- Brush the sides of the meat you're going to roast with olive or vegetable oil.
- Cover with a dry home-made rub.
- Place it on the refrigerator overnight.
- Before you start cooking get the mixture out of the refrigerator and let it sit out for at least 30 minutes.
- Preheat the grill. Once it reaches 300 degrees you can place the loin in the grills. Make sure that the pan is centered. As I have mentioned earlier, you can add seasoning to the water. You can also mix concentrated juice, garlic, onion slices and any spices to enhance the flavor further. You just have to be creative about this.
- After which, close the lid.
- Leave it cooking for 1 hour and 20 minutes.
- Check the meat if it's cooked by using a meat thermometer. If you're cooking pork loin the meats temperature should be at 170 degrees and 140 degrees for rare beef.
- If so remove the meat from the grill and let it cool down for another 15 minutes before serving.
