- The FDA Food Code provides a scientifically sound legal and technical basis for regulating food service. The Food Code is issued every four years.
- Food workers are encouraged to practice good personal hygiene to prevent contamination of the desserts. Anyone handling food must keep hands and fingernails clean, report all illnesses, dress appropriately and prevent cross contamination of the food with unsanitary objects.
- Frozen dessert mixes must be stored in a temperature under 41 degrees at all times and should never be places in heat to thaw. Also, all soft-serve freezers should be completely disassembled and sanitized on a daily basis.
