Making Excellent Waffles
1Preheat the waffle iron. Refer to the manufacturers instructions for correct temperature settings.

Mix together the flour, baking powder, salt and sugar. Whisk lightly to incorporate the ingredients.

Separate the eggs; place the yokes in one bowl and the whites in another.

Melt the butter and add to the egg yolks. Whisk until they are light and fluffy. Measure and add the milk, stirring until blended.

Pour the egg-yolk mixture into the dry ingredients. Gently stir until all of the lumps disappear.

Whisk the egg whites until they are stiff, but not dry.

Fold the egg whites into the batter with a rubber spatula. Do not over mix.

Spray the waffle iron with cooking spray. Pour 1/2 to 1 cup of batter onto the center of the waffle iron; this amount may vary according to the size of the iron. Close the lid and let the batter cook until the waffle is golden brown. Remove the waffle.

Serve immediately with butter and syrup. Add fruit, cream, or berries for additional flavor.
