Fun Meals for Kids on St Patty"s Day

Kids love holidays, and you are sure to bring the luck o' the Irish to your St.
Patrick's Day dinner or party with these quick and easy meals and snacks.
1.
Transform ordinary into extraordinary by simply adding color to everyday dishes.
Start the morning with green eggs and ham.
Simply add 2-3 drops of blue food coloring to scrambled eggs and mix in a handful of minced ham.
2.
If you have a shamrock cookie cutter, adding shamrock toast to your green eggs and ham is a no-brainer.
Alternately, use the cutter to brighten up your child's lunch with a shamrock-shaped sandwich.
Throw in a few shamrock cookies and you are sure to be crowned the best parent on the block.
3.
For a delicious, kid-friendly snack or side dish, try mixing pistachio pudding with crushed pineapple and whipped topping.
My family lovingly refers to this as "Green Fluff.
" 4.
Got leftover steaks? Why not introduce the kids to an Irish tradition by serving a hearty beef stew? Corned beef is another popular option.
Whip up some green mashed potatoes for a festive side dish.
St.
Patrick's is also the easiest day of the year to get your kids to eat their greens, so be sure to have plenty of green vegetables on hand.
5.
Don't forget to add a wee bit o' holiday spirit to your drinking glasses.
Create rainbow ice by freezing colorful fruit and seltzer in ice cube trays.
6.
Key Lime Pie is the perfect way to top off your St.
Patrick's Day dinner.
Simply mix a 14-ounce can of sweetened condensed milk with 4 eggs and 1/3 cup of lime juice and pour it into a prepared graham cracker crust.
Bake it for 15 minutes at 350 degrees.
Then, decorate the sides with thin chocolate cookie wafers and top with a peeled and sliced kiwi.
7.
Another tasty option for dessert is a Pot O' Gold Cupcake -- a rainbow-colored cupcake paired with gold chocolate coins.
To create rainbow cupcakes, simply prepare a white cake mix and divide the batter into six small bowls.
To create purple batter, add 9 red drops of food coloring and 6 blue drops of food coloring.
To create the ideal blue, green and yellow shades, you will need 12 drops of each in the batter.
For orange, add 12 yellow drops and 4 red drops.
For Red, use 18 drops of food coloring.
Layer the batter inside the baking cups and bake according to box instructions.
After cooled and shortly before serving, add whipped cream icing to represent a cloud.
Sit the cupcakes on a platter covered with gold chocolate coins.
8.
Entertain and intrigue children by placing Irish sayings around the house.
For instance, at the top of the stairs post, "As you slide down the banister of life, may the splinters never point in the wrong direction.
" A perfect lunchbox note might say, "Bless your little Irish heart and every other Irish part.
" Have a wonderful holiday!
