USDA Vegetable Standards
- Given the very long list of vegetables available in the market, these vegetable standards are placed in more specific categories: "Vegetables for Fresh Market," "Vegetables for Processing" and "Nuts and Specialty Crops." The standard for each classified vegetable provides definition of the vegetable and specific properties and conditions that determine its quality. Generally, each list includes information about the vegetable's size, growth, physical description, tolerances, defects and handling needs.
- In collaboration with the Agriculture Marketing Service (AMS) and the National Organic Program (NOP), the USDA accredits private businesses, organizations and state agencies to certify producers and handlers of agricultural products passing the NOP regulations.
- The list providing the vegetable standards continues to change according to the current trends, needs and conditions of the environment and the marketplace. An industry group intending to develop or revise any U.S. grade standard must contact the AMS. Any approved change is geared toward the greater needs and interests of the people and the industry.
