How to Use a Broiler to Cook Chicken
- 1). Flavor the chicken with seasonings as desired. Place the chicken onto the broiler rack with the skin side down. Avoid lining the broiler with aluminum foil because it will not allow the drippings to fall under the pan.
- 2). Place the broiler pan in the oven. Measure the distance from the broiler to the top of the chicken. The chicken needs to sit 6 inches under the broiler. Adjust the oven racks to achieve the proper distance.
- 3). Turn the broiler on and allow it to heat for 10 minutes. Place the chicken in the oven to cook on the broiler rack or pan. Examine the chicken while it cooks and rearrange the chicken to prevent the edges from burning.
- 4). Turn the chicken over with tongs when the top side browns. The chicken pieces may not cook evenly at the same rate. Remove the chicken as it finishes cooking to prevent overcooking. Chicken breasts need to reach 170 degrees F and other chicken pieces need an internal temperature of 180 degrees F.
- 5). Remove the broiler pan from the oven. Allow it to rest for 5 minutes and then serve immediately.
