Use Abundance of Green Tomatoes and Red Peppers in Chutney



Not passing up a case of red peppers the farmer's market was practically giving away coincided with a cold snap and a lot of green tomatoes. My frugal Eastern European peasant heritage kicked in so I thought why not chutney? Chutney is of East Indian origin and is a condiment made with fruit, vinegar, sugar and spices. It can range in texture from smooth to chunky (I prefer the latter) and mild to spicy hot (I prefer somewhere in between). Chutneys are perfect foils for roast meats, poultry and as an appetizer when slathered on a crostini or cracker that has been topped with a mild cheese (cream cheese counts).
