How to Bake a Satisfying Mexican Lasagna

Drizzle a tablespoon of extra virgin olive oil in a glass baking dish. Spread it over the entire baking dish, including the sides. Pre-heat your oven to 350 degrees F. - 2). Pour ½ tablespoon olive oil into a frying pan. Ground chicken can get very dry and tends to stick to the pan without the oil. Add your ground chicken and cook until the chicken is half-way done.
- 3). Add ¾ cup of salsa. Add in the packet of fajita seasoning, a teaspoon of salt and a tablespoon of cilantro cooking base. Continue frying until the chicken is cooked through.

Add a can of black beans to the mixture and heat thoroughly. Optional ingredients at this point are corn, fresh cilantro and chopped onions. - 5). Tear the flour tortillas in halves. Place the flat edge of the first tortilla on the left side of the serving dish, and vice versa for the right side. In between these two, place another half tortilla. You can also tear the tortillas in whatever fashion you want, as long as the base of the dish is covered.
- 6). Place a layer of the chicken and beans mixture over the top of the tortillas. Place another layer of tortillas, followed by a layer of shredded cheese. Repeat this once more, finishing up with a layer of cheese on top.

Bake the lasagna for 15 to 20 minutes. Let cool for five minutes, then serve hot. Garnish with your choice of sour cream, salsa and guacamole. You can also add a sprig of cilantro for a nice presentation. This is served well alone or with a spring salad mix.
