- Edema is a condition caused when the kidneys produce less urine because they are unable to excrete salt. The excess salt and toxins build up in the body and cause an illness called uremia. Refrain from eating smoked meats and fish, high sodium soups or gravies, processed foods and foods containing monosodium glutamate.
