Humitas



Popular in Chile, Peru, Ecuador, Bolivia and Argentina humitas are a terrific mix of sweet and savory. Sometimes in a bowl and others wrapped in a corn husk (en chala), it is a mix of ground corn, milk, some vegetables, and spices. It would be perfect on a fall day with a warm pieces of crusty bread.

The Beauty of Northern Argentina

Ingredients
  • corn kernals from 10 ears of fresh corn
  • 2 large tomatoes, peeled and seeded
  • 1 pepper cut into small pieces
  • 1 scallion
  • 1 onion
  • 2 Tbls fat/lard
  • A pinch of paprika
  • A pinch of pepper
  • A pinch of sugar
  • 1 cup of milk


Preparation

Braise the onions and pepper in fat, but do not let them get browned, add teh tomateoes and after 5 minutes, add the grated corn cobs and milk. Place the preparation in earthenware bowls, sprinkle it with sugar and heat everything in the oven until the sugar is browned.

Variations
Some humita recipes include white cheese melted in the center of the humita mix.
