How to Make Healthy Spinach Artichoke Dip

    • 1). Preheat oven to 375 degrees.

    • 2). In a large bowl, combine spinach, artichoke hearts, garlic and half of the Parmesan cheese. Season with salt and pepper. Drizzle with enough olive oil to evenly coat the spinach. Use a good extra virgin olive oil here, as it will add great flavor. Toss to combine.

    • 3). Spread the spinach mixture into a casserole dish. Top with remaining cheese.

    • 4). Bake uncovered for 15 to 20 minutes, or until cheese is lightly browned.

    • 5). Remove from oven and serve hot as an appetizer with chips and salsa or crostini, or as a vegetable side dish with your meal.
