- Like traditional southern boiled peanuts, Hawaiian boiled peanuts rely heavily on salt for their flavor, but like Chinese boiled peanuts, they are flavored with star anise. So what makes them different? It's the traditional Hawaiian sea salt. Also known as red clay salt, Hawaiian salt is sea salt that has been coated in red clay and then baked. It adds a distinctive flavor, and color, to Hawaiian boiled peanuts.
- To make Hawaiian boiled peanuts, place about 1 cup of raw peanuts, in the shell, in a saucepan. Cover with water and soak overnight. Drain the water, cover the peanuts with fresh water, and add a small handful, or about 3 tablespoons, of Hawaiian sea salt. Add 1 or 2 whole star anise and stir.
- Bring to a rolling boil and allow to continue boiling for about 1 hour. Drain the water and remove and discard the star anise. Allow the peanuts to cool, and then shell and place in a large bowl for serving.
