Succulent, Tasty and Healthy Sugar Free Cake

Sugar free cakes are a rage nowadays as more and more people are turning towards sugar free cakes to satiate their craving for sweets and cakes.
This carrot cake recipe is not difficult to make at home.
Given below is a simple, super tasty and healthy sugar free carrot cake recipe that will delight your taste buds.
What you will need: - Egg whites - 4 - Eggs - 2 - Canola oil - 1/3 cup - Unsweetened applesauce - 1/3 cup - Apple juice concentrate - 1 cup - Water - 1/4 cup - Whole grain flour - 3 cups - Baking powder - 1 tablespoon - Baking soda - 1 teaspoon - Salt - 1 teaspoon - Ground cinnamon - 2 tablespoons - Grated nutmeg - 1/4 teaspoon - Raisins - 1 cup - Grated carrots - 2 1/2 cups To prepare: - Preheat the oven to 350F.
- Use an electric blender to whisk the egg whites into soft peaks and double the volume.
- Break in the rest of the eggs and whisk some more.
- Add the oil, applesauce, apple juice concentrate and water to the eggs and mix well.
- In a separate bowl, mix the whole grain flour, baking powder, baking soda, salt, ground cinnamon and grated nutmeg.
- Add the dry ingredients to the egg mix, one spoon at a time, and fold well between each addition.
- Add the grated carrots and vanilla extract to the mix and blend well using a spoon.
Add the raisins.
- Grease two 9-inch cake pans using a little oil and dust with flour.
- Pour the batter in the two pans equally and smooth the tops.
- Bake in the preheated oven for 25 to 30 minutes.
Turn down the temperature to 325F and bake for another 10 minutes.
Since the carrot cake is denser than normal cakes, it is necessary to bake at a low temperature.
- Cool on a wire rack before applying frosting.
Carrot cake goes best with cream cheese frosting.
For sugar free cream cheese frosting you will need: - Cream cheese - 1 1/2 cups - Butter - 1 1/2 teaspoons - Splenda - 1 cup - Vanilla extract - 2 teaspoons To prepare: - Put the splenda in a mixer jar and blend to the consistency of confectioner's sugar.
- Add the cream cheese and butter to the Splenda and beat until even and smooth.
- Add the vanilla extract and mix well.
- Let the frosting stand for some time to firm it up.
Presentation: - Assemble the cake by sandwiching some frosting between two cakes and spreading the rest of the frosting on the sides and top.
- Let it cool for some time before serving.
Note: You can skip the applesauce and use more apple juice.
However, keep in mind that you should skip the water as well, if you are skipping the applesauce.
