Quick and Cheap Meal Ideas

    Taco Night

A fiesta is only moments away from the table. Set out a package of hard and soft taco shells along with chopped vegetables, including shredded lettuce, onions, bell pepper and tomatoes. Other taco toppers include shredded cheddar cheese, black olives, guacamole and sour cream. Brown a package of ground beef in a skillet with a package of taco seasoning, found with the spices at the grocery store. For a vegetarian option, include a bowl of black or pinto beans. Encourage others at the table to create their own tacos.

    Lasagna

Lasagna conjures images of slaving over a stove and a boiling pot of water, but the opposite is actually true. Purchase a package of no-boil lasagna noodles, a jar of spaghetti sauce or tomato sauce, ricotta cheese, mozzarella cheese and spinach. Layer the noodles with the sauce, ricotta cheese and spinach. Once finished making the lasagna, top it with extra sauce and the mozzarella. Check the package of no-bake lasagna to see how long and at what temperature it should be baked; generally, it takes one hour to cook. Serve with a side salad.

    Homemade Pizza

    • Pizza is a favorite go-to meal for many people.Jupiterimages/Comstock/Getty Images

Pre-made pizza crust can typically be found at the local grocery store and, thanks to demand, more grocery stores sell pre-packaged pizza dough. If dough isn't available at the store, check with a local pizza restaurant. Take the dough or crust, and top it with tomato sauce, cheese and other desired toppings. A pizza typically takes 20 minutes to bake at 350 degrees. To lessen the time, cut the pizza dough into smaller pieces, so each family member has his own personal pizza. This also allows everyone to apply their own favorite toppings.

    Enchiladas

Wrap some browned ground beef or cooked shredded chicken in flour or corn tortillas with chopped vegetables of your choice. Onions and bell peppers are common choices. Wrap the tortillas and line them up in a baking pan, lined with aluminum-foil. Top with either red taco sauce or salsa, and sprinkle cheddar cheese on top. Bake in a 350-degree oven for 15 to 20 minutes, until the cheese melts and the enchiladas are heated through.

    Crock Pot Meals

    • If you have a crock pot, you have a meal that tastes like it took hours to cook while you only spent minutes prepping the ingredients in the morning. One basic crock pot recipe is to combine a can of condensed cream of mushroom soup, a package of boneless skinless chicken breasts, and chopped celery and carrots. Dump the ingredients into the crock-pot in the morning, set on low, and leave it for eight hours. For chili, use a can of tomato sauce, a package of ground beef, one to two cans of beans and 1 to 2 Tbsp. chili powder for taste. Again, set to low in the morning and it will be done by the time you get home from work in the evening.

    Vegetarian Options

    • Many people use meat to bulk up their meals, especially ground meat that doesn't take as long to cook. However, vegetarian options can be inexpensive and less time-consuming. Substitute beans for typical meat-based meals. For example; create burger patties by using black beans and ground oats. Mash these ingredients together with a bit of onion powder, form burger-shaped patties, and place on a hot skillet with some oil. Large salads are simple enough to throw together, with a base of lettuce heaped with chopped, raw vegetables like onion, broccoli, carrots, mushrooms and yellow squash.
