What"s Better With Lamb Burgers Feta Or Blue Cheese?
These Greek inspired and juicy lamb burgers are in great demand in Singapore bars. People just love these burgers that are deliciously flavored with garlic, fresh mint, feta cheese and topped with tomato slices, sweet onion and tangy yogurt sauce diced with cucumber and some fresh dill.
Ingredients Required
Ground lamb - 1 pound
Garlic cloves - 1(very finely chopped)
Feta Cheese -cup (crumbled)
Fresh mint - 1tablespoons (finely chopped)
Salt -tsp
Black pepper (freshly ground) - for taste
Sweet Onion - 4 slices ( inch thick)
Hamburger rolls - 4 no.
Ingredients required for the sauce
Plain Yogurt -cup
Cucumber - 1 no. medium sized (peeled, seeded and cut into small dices ofinch)
Garlic cloves -clove (very finely chopped)
Fresh dill - 1 tablespoon (finely chopped)
Salt - To taste
Black pepper - as per taste (freshly ground)
You can find this dish embellishing the dining counters of corporate events. Many people are just fond of the juiciness of the lamb meat, and when it is mixed with the yogurt sauce, the entire setting is just awesome.
Method
For the sauce - Place the cucumber dices in a strainer and set it over a bowl. Season it with salt, toss the pieces to mix the salt evenly and then set it aside in order to drain. Mix yogurt, dill and garlic in a separate bowl and set aside.
In a large mixing bowl, take the ground lamb and add garlic, mint, feta cheese, salt and some black pepper. With the help of a wooden spatula mix all the ingredients as much as possible before finally mixing it gently with your hands.
Make four equal portions and gently form patties making a slight depression at the centre of each of them with the help of your thumb. Transfer the contents on to a plate and allow for chilling for about 15 minutes before grilling.
Pre-heat a charcoal or gas grill to medium high temperature of about 400oF.
Coat some nonstick spray on a piece of heavy duty foil and put it on the grill. Arrange the sweet onion slices in a single layer. Sprinkle some salt and pepper on the onions and cook them until they start caramelizing along the edges in two to four minutes. Remove the foil with onions from the grill and set the onions on one side.
Apply oil on the grill grates and add the burgers; now grill them for about four minutes on one side, turn around and grill again for two to four minutes or till the burgers gets cooked as desired.
[Ground lamb is best when served medium hot, i.e. at an internal temp. of 160oF.]
After grilling, arrange the burgers on a plate and let them rest for some five minutes.
While the burgers rest a bit, mix the cucumber dices with the yogurt combination and season with salt and pepper as per taste.
Assemble the burgers so that it looks tempting and delicious. Place a slice of onion at the bottom of each of the rolls, top it with tomato, the lamb burger prepared above and a spoonful of the yogurt sauce. Serve the yummy looking burgers immediately.
