How to Cook Salmon to Moist & Tender Perfection
- 1). Make the salsa sauce. Finely chop the onion, chili and pineapple. Mix together with the coriander and 4 tablespoons of olive oil. Season with black pepper and salt and place in the refrigerator for about an hour. Be sure to taste the mixture regularly throughout the mixing process as the amount of seasoning required depends on the strength of the coriander and chili.
- 2). Prepare the salmon glaze. Mix the garlic, rosemary, thyme, oil and 1 tablespoon each of both kinds of mustard in a food processor. After around 30 seconds of mixing pour the glaze into a bowl. Season by stirring in the rest of the whole-grain mustard.
- 3). Preheat your broiler to a medium to high heat. Line a rimmed baking sheet with silver foil. Spray the foil with the nonstick oil, then place the salmon on the foil. Season with salt and pepper and place in the oven about 4 inches from the grill. After two minutes, remove the salmon and brush with the mustard glaze. Cook for another five minutes or until cooked through. The salmon is entirely cooked when it is completely opaque.
- 4). Chop the lemon into slices. Serve the salmon immediately with the salsa, slices of lemon and a crisp white or a light red wine.
