Spices to Use for a Pork Loin
- Mixing up your own spice rub is a dry way to roast a pork loin. Decide what spices you like and place 1/4 tsp. of each in a mixing bowl. Mix with your fingers, then rub the pork loin down until the spices cover the entire piece of meat. Roast or grill accordingly. For a Cajun combination, try paprika, hot chili powder, black pepper, garlic powder, parsley, red pepper flakes and brown sugar.
- Fruit or fruit juices can be used to season a pork loin and keep it moist during cooking. Try citrus combinations, or lay fruit on the actual loin. You can create a sweet pork dish or a sweet-and-sour style of meal with fruit. For a country-style recipe, sprinkle the roast with black pepper and brown sugar, then lay apple or pineapple slices over the entire loin. For an Asian-style sweet and sour roast, mix 1/4 tsp. brown sugar, 1/4 tsp. soy sauce, 1/4 tsp. rice vinegar, the juices of half a lemon and half an orange, a dash of paprika and garlic powder. Coat the roast and bake or grill.
- Use Italian style spices to rub down a pork loin and pair with Mediterranean style vegetables or pasta dishes. Italian spices can be used alone or in combination with one another. For instance, for a simple rub, use a bottle of Italian spice. For a more concentrated style, peel five or six pieces of fresh garlic, then puncture the loin in five or six places on top with a sharp knife. Push the garlic into the holes, then lay a few sprigs of fresh rosemary on top and bake. Alternatively, if you want a juicy pork loin, saute chopped onions, garlic, red wine and balsamic vinegar -- then pour over the roast and season with rosemary.
- Roast yourself a taste of India with curry spices or Chinese five spice to entice your senses. Combine this roast with mint-infused rice or roast vegetables for an Indian fusion meal. Use a store-bought curry spice to make a dry rub for the pork loin. Alternatively, mix a healthy portion of curry spice in a bowl with chopped tomatoes, onions and apricots; pour over the pork loin and roast. For a Chinese five spice rub, combine 1/4 tsp. of each: Chinese five spice, saffron, turmeric powder, cumin and brown sugar.
