How to Make Indonesian Layer Cake

    • 1). Beat the butter with an electric mixer or hand whisk until smooth and creamy. Preheat the oven to 350 degrees F.

    • 2). Mix the cinnamon, ground cloves, star anise and ground green cardamom and brandy in a small mixing bowl and set aside.

    • 3). Beat the egg yolks and ¾ of the sugar with an electric mixer until thick and set aside. Put the remaining sugar in a separate bowl and beat it with the egg whites.

    • 4). Combine all of the ingredients contained in separate mixing bowls into one large mixing bowl. Mix with a whisk for 30 to 60 seconds.

    • 5). Grease the bottom and sides of a large baking pan with butter or shortening. Cut a piece of wax paper so that it fits neatly inside the bottom of the pan. Grease the top surface of the paper with butter or shortening. Put the lined baking pan in the oven for 3 to 5 minutes

    • 6). Remove the pan from the oven and ladle cake batter into the pan, spreading it to form a layer over the base of the pan. Bake for 5 to 7 minutes or until light brown. Poke small holes in the top of the cake with a toothpick.

    • 7). Pour more cake batter over the bottom layer and bake for an additional 5 to 7 minutes. Repeat this process, using one ladle full of cake batter each time, until the batter is gone. Remove the cake from the pan immediately after cooking, and cool for 45 minutes before serving.
