Relish Your Salads

Relish, usually made from sweet or dill pickles, can be a delicious addition to many types of salads, side dishes, and sandwiches.
Many people love the taste of sweet relish on their hamburger and hot dogs and use it alone or along with ketchup, or mustard, or both.
The most common types of relish enjoyed in the US are made from pickles.
They include hamburger relish, which is a pickle relish made with ketchup, and hotdog relish, which is also a pickle relish but made with a mustard base instead of ketchup.
In the UK, the very same condiment is referred to as pickle chutney.
Not all relish is made from cucumbers or pickles as there are other varieties such as cranberry, corn, and chow-chow, which is a sweet relish made from cabbage.
The spicy Gentlemen's Relish, which was first invented back in the early 1800s, is rich with spiced anchovies.
This type of relish is most often eaten on buttered toast.
By definition, a relish is any fruit or vegetable that is chopped, and cooked or pickled.
The general taste of relish should be mild or hot, sweet or savory, and always feature a strong flavor.
Some relishes are much thicker than others are.
Choosing a thick or thin variety is mostly matter of personal preference along with taking into consideration the types of foods you will be using the relish with.
You can quickly and easily make your own relish at home especially if your garden is producing an abundance of cucumbers every year.
To make about five half pint jars of sweet pickle relish you will need about 2 cups of cucumbers, three quarters of a cup of chopped Vidalia onions, a tablespoon of sea salt, a half tablespoon of pickling salt, half cup of white vinegar, and three quarters of a cup of white sugar.
Combine everything together in a large pan and bring it to a boil, reduce the heat and simmer for 10 minutes stirring occasionally.
If you want thick relish, strain the mixture before pouring it into jars where you can store it in the refrigerator for up to two weeks.
Chilly Pickled Seafood Salad Recipe What You Need
  • 1 pound imitation crab meat, cleaned, shredded
  • 1 cup sweet onion, finely chopped
  • 1 cup celery, finely chopped
  • 1/2 cup dill pickle, finely chopped
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon dill weed
  • Salt and white pepper to taste
  • 1/2 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 2 tablespoons chives, chopped
How to Make It In a large bowl, combine the shredded crab meat with the chopped onions, celery, and dill pickle.
Mix in the sweet pickle relish followed by the dill weed, salt, white pepper, mayonnaise, yellow mustard, and chives.
Mix all of the ingredients until well combined.
Chill the salad for at least 2 hours before serving.
Serve the chilly picked seafood salad all alone or use it as a salad topper, a sandwich spread, a chunky dip, or as a topping for crackers and breads.
Serves 6.
