How to Cook in an Asian Clay Pot

    • 1). Soak both the clay pot and lid in cold water for at least 15 to 20 minutes. The only exception is when one or both pieces are completely covered with glaze, both inside and out. If this is the case, you don't need to soak them. If they are glazed only on the outside, they must still be soaked.

    • 2). Add the ingredients for your recipe. Popular items include rice, chicken and various vegetables. Follow the amounts on the recipe exactly, as they are specifically made for clay cooking, which has very different cooking times than other types of cooking.

    • 3). Place the clay pot in a cold oven, then set the temperature. Never place a clay pot in a preheated oven.

    • 4). Leave the clay pot in the oven for the allotted amount of time for your recipe, which may be several hours, depending on the temperature. Clay pots are made for slow cooking, so this is normal.

    • 5). Soak the pot overnight in water once the food has been removed. This will make sure flavors from your dish do not set in and permeate the next dish you cook.
