What Are Summer Vegetables?
- Avocados are a summer vegetable full of healthy monounsaturated fats and B vitamins. You can squirt a dash of lime juice over freshly sliced avocado and enjoy it over a summer salad made with spinach, corn, onions and tomatoes or eat the vegetable plain. Avocado can also be used in guacamole, a popular summer appetizer. If you feel particularly brave, take a cue from countries, such as Indonesia, Brazil and Vietnam, and make an avocado milkshake with chocolate syrup, sugar, milk and pureed avocado.
- Bell peppers taste delicious in the summer months and when sliced into strips make a perfect addition to a crudite (raw vegetables) tray. You can also make stuffed peppers with rice, meat and other seasoning added to the inside of a fresh bell pepper. Hot peppers, such as chili peppers and jalapeno peppers, are also considered summer vegetables. These hot peppers add a nice burst of spice to summer dishes, though you should use them sparingly.
- Onions in all forms, red, white, yellow, and green, are all grown in the summer months. Chop a few onions and add them to fresh summer soups or salads or try mixing it in with fresh guacamole for a burst of flavor. Onions have the perk of adding quite a bit of flavor to nearly any dish and taste delicious when grilled with chicken or fish.
- Grilled eggplant is an especially delicious summer treat. Try grilling eggplant steaks with a little garlic, basil, thyme, olive oil and balsamic vinegar for a tasty variation on this summer vegetable.
- Corn is another summer vegetable that tastes wonderful grilled with a little butter. You can also try roasting corn on the cob, then cutting off the kernels and tossing them with a summer salad. Roasted corn adds a smoky flavor to the corn, making it a unique addition to any summer meal.
- Summer squash refers to squash that is harvested while immature, meaning you can eat the rind. Yellow squash and zucchini are the two summer squashes most commonly eaten. Freshly sautéed yellow squash or zucchini is delicious. Try breading and frying zucchini as a summer appetizer or grilling it with other summer squashes as an accompaniment to grilled fish.
- Tomatoes are enjoyed in summer months around the world. Sliced ripe tomatoes are delicious on their own or when added to a sandwich with a little salt and pepper. Fresh tomatoes pair perfectly with a summer barbecue, whether added to hamburgers or chopped up to make a salsa. Gazpacho, a cold soup, also uses tomatoes.
