Quick Healthy Recipes - Oven-Baked Veggies and Spicy Pancakes

Nowadays it is often difficult to find the time to prepare your own meals at home because there are a million things to do and the day still has 24 hours only.
Maybe you are a single and you have to do everything yourself: work, buy the groceries, do the laundry, clean your flat, wash the car and, and, and.
Or you are a working mom who comes home late and does not know when to cook.
Rather don't buy those ready prepared meals or even take-aways, as tempting as it might be! They often contain highly processed ingredients and as a result they may lack the vitamins that your body needs.
They also tend to contain a lot of unpleasant things like too much or the wrong kinds of fat and different additives that shall make them look nicer and keep for longer.
The latter might even be harmful for your health.
It is for these reasons that most health advisers recommend not to eat highly processed foods.
But luckily it is not always necessary to stand in the kitchen for half a day to prepare a nice meal.
There are plenty of recipes that are quick and easy to make.
A South African Seafood Take Away Chain uses the slogan "Who says that a take-away must have anything taken away?" You can cook a tasty meal in just 30 minutes or a little more, and it will even be a healthy one made out of fresh ingredients! Here are two of my favourite vegetarian recipes (both serve 4): Quick oven-baked veggies Ingredients 1 chopped onion 1 small brokkoli, cut into small pieces 250 g fresh mushrooms 1 red or yellow pepper, chopped 400 g fresh or canned tomatoes 1 shot balsamico vinegar 350 g cooked pasta Cheese to bake Instructions 1.
Fry the onion in a little bit of olive oil until it's tender.

Add the veggies and the vinegar, close the lid and let the food cook for about 10 minutes on moderate heat.

Bring to boil in the open pot and allow to boil for another 5 minutes until the sauce slightly thickened.
4.
Mix the veggies and pasta, fill it into an ovenproof dish, sprinkle with cheese and bake on 210°C until it's nicely golden (takes about 5-10 minutes).

Enjoy your meal! Quick spicy pancakes Ingredients 1 tin of sweet corn 1 chopped onion 2 crushed garlic cloves 2 tbsp.
maize flour 2 eggs, slightly beaten 2 tbsp.
sweet chili sauce 4 tsp.
brown sugar Salt, freshly ground black pepper and fresh coriander Instructions 1.
Mix all the ingredients thoroughly.

Heat a little oil in a frying pan on moderate heat.
3.
Give tablespoons of the dough into the pan and bake from both sides until brown.
Be careful when you turn them, they are quite soft and might break when you turn them too early.
4.
Serve immediately with plenty of cooked rice.
