How to Decorate a Fish Cake

    • 1). Screw on a size 16 tip to an icing bag. Hold the tip just off the surface of the cake. Tilt the bag upward at a 45-degree angle. Squeeze out small, individual squirts of icing. Cover a portion of the cake with one color and/or flavor of icing. Repeat this step with additional colors and/or flavors of icing. Tip 16 nozzles produce miniature star-shaped squirts that offer a charming, scale-like effect for a fish cake.

    • 2). Attach a size 21 tip to the icing bag. Hold the nozzle close to the cake and tilt the bag back to its 45 degree angle. Squeeze the icing out through the tip while pulling the bag backward. Tip 21 nozzles provide wider, streak-like flows of icing, which provides the fish cake with a striped look. Use different colors and flavors of icing. Cover the body, fins and tail with colorful stripes as your design demands.

    • 3). Dip a small spatula into a batch of vanilla icing. Apply a splotch of icing to the face of the fish. Move the spatula in a circular motion to create a circle with a 1- to 2-inch diameter. Press a small chocolate ball, gummy bear or piece of candy into the center of the vanilla circle to create the illusion of an eye.
