How to Make Chicken Chili for a 12-Person Party
- 1). Heat olive oil in a large pot over medium heat; add onions, and cook until they are translucent. Add minced garlic, and cook for another minute. Mix in the bell peppers and seasonings, and cook for another minute.
- 2). Crush the tomatoes by hand, and add them to the pot with fresh basil. Bring the pepper and tomato mixture to a boil, and then reduce to low heat. Simmer the chili uncovered for about 30 minutes, and stir the pot occasionally.
- 3). Preheat your oven and a cookie sheet to 350 degrees F. Rub chicken pieces with a little olive oil, salt and pepper, and then place them on the hot cookie sheet for roasting.
- 4). Roast the chicken for about 40 minutes or until cooked through. Once the chicken is cooked, remove from heat and allow the breasts to cool. Separate the chicken from the bones and skin, and then cut it into chunks.
- 5). Add the chicken chunks to the chili and simmer. Cook the chili on low heat for about 20 minutes. Spoon into small bowls, and serve with chopped onions, cheddar cheese, sour cream and corn chips.
