Video: Oven-Braised Beef Brisket

Hello, I'm Geoff Lukas of Sofra Bakery in Cambridge, Massachusetts, and I'm going to show you how to make oven braised brisket. What I have here is a rolled first cut brisket, it's about five and half, six pounds in weight. I'll season that with salt and black pepper. We'll then suit that in a cast iron skillet to brown it on all sides. Take it out and let it rest on a plate, as we caramelize slivered onions, garlic, celery and carrots in the rendered fat. As the vegetable is caramelize, we'll introduce some dry bay leaf, as well as some beer. Here we have a Chocolate Stout, but any dark beer will work as well. We'll then cook that down by about half, which will cook out all the alcohol and ensure that we don't end up with any boozy off-flavors in the meat. We'll then add two cups of water and a little bit of espresso powder, but you can also use you know, three quarters of a cup of brewed coffee as well. We'll then put the meat back on top of the vegetables and the liquid. Bring that up to a simmer, cover in foil and place it in a 350-degree oven. Take it out about three to four hours.
