In 1872, when São Paulo State was living its late 19th-century Coffee Cycle, José Alves Cardoso and his wife Carolina founded Fazenda Jaboticabal. The farm named after jaboticaba orchards was renamed in 1919 after Dona Carolina's death and, since the decline of the Coffee Cycle, turned into by the family into Fazenda Dona Carolina Historical Hotel. The hotel in Itatiba is located about 62 miles from São Paulo and 31 miles from Campinas.

The property with a preserved farmhouse and outdoor activities and entertainment which make it a good place for family vacations is also an attractive option in cachaça tourism: day visitors can follow the steps of production of Dona Carolina, the farm's own award-winning label.

In the last decade, the farm has also gone back into coffee growth, with tupi, a hybrid of catuai and caturra. Coffee tours are available and the product, just like the cachaça, can be purchased at the farm.

Memories of the Coffee Cycle are visible in the beautiful farmhouse and the former processing building (tulha), now a space for conventions and other events. In the past, the sacks of coffee were transported on donkeys to Jundiaí and then transported on the Santos-Jundiaí railroad - built for the coffee industry - to the Santos docks to be exported.

Dona Carolina, an abolitionist and Republican who took over the property administration after her husband's death, freed all farm slaves before the Abolition in 1888 and gave them 593 acres of land.

That area became known as Bairro dos Pretos (The Black People's District).
