Sweet Potato Biscuits

 These sweet potato biscuits are made with self-rising flour and fresh cooked sweet potatoes.

Lightly Spiced Sweet Potato Biscuits

Ingredients
  • 2 cups self-rising flour
  • 4 tablespoons shortening
  • 3 tablespoons butter
  • 4 tablespoons sugar
  • 1 cup mashed sweet potatoes, warm
  • 1/3 cup milk
  • 2 tablespoons melted butter, optional


Preparation

Put the flour in a large bowl. Cut in shortening and butter with fork or pastry cutter. Combine warm sweet potatoes and sugar, mixing well. Add milk. Combine sweet potato and flour mixtures. Blend well.

Place on floured surface and pat out to desired thickness or about 1/2 to 3/4 inch thick. Cut with biscuit cutter. Bake on lightly greased baking sheet at 400° for 10 to 13 minutes, or until nicely browned.

Brush with melted butter while they're hot, if desired.

Makes about 1 1/2 dozen.
