Video: How to Make Mexican Corn

Hi, I'm Jessica Young. When I think of Summer, I think of grilling, and my favorite thing to grill is corn. We're outside today and we're going to do a Mexican corn dish on the grill. I have some sweet corn here and we're just going to put it right on the grill until it chars all the way around. It takes three or four minutes, you really don't have to cook it that long, just go right on here and you just put these on until they're charred all the way around. In a large bowl ready to go I have half a cup of mayonnaise and half a cup of butter so when the hot corn comes off, we're going to toss this all over the corn and the corn is just going to melt that butter and mayonnaise together and actually make like a nice sauce to coat the corn. Toss these, you can kind of like roll them up, toss it up, toss it up, toss it up. Then we're just going to transfer these back to our plate after they're coated, all in butter like that and then we're just going to sprinkle some salt, pepper all over it and a twist of the pepper gives it good flavor. And then I have paprika here, some smoked paprika just to get that grill flavor but some people put shredded cayenne on this. I'm not that daring, so this is going to work and then some Mexican cotija cheese right over the top of everything and you can also use ricotta salata if you find that or farmer's cheese in your grocery store. Otherwise, the authentic stuff is the best. So there you have it, Mexican corn, definitely something I look forward to making every Summer on the grill and you have to try this recipe and I have to try this right now.
