Salsa para Asados
This sauce for beef is much like Argentine chimichurri, and can be used for any variety of meats and barbeques.

Ingredients
- 1 cup olive oil
- 1/2 red wine vinegar
- 12 cloves garlic, minced or pressed
- 2 teaspoons pimentón (ground red pepper) or 1/2 teaspoon ground
- cayenne pepper mixed with 1 1/2 teaspoon sweet paprika
- 1 cup chopped parsley
- 1 teaspoon dried oregano
- 1 teaspoon dried crushed thyme
- Salt and pepper to taste
Preparation
Combine all ingredients but the salt and pepper. Mix well in a blender or food processor, then season with salt and pepper to taste. Let stand 2 hours at room temperature or refrigerate overnight before serving.About 2 1/2 cups.
